I love a good potato salad.
I love how, when it is made perfectly with love, can make you feel so deliciously comforted with every single moreish mouthful.

Now, the recipe for this particular salad was inspired by my beautiful late Grandmother Jean, who I remember used to make a version of this salad. She sadly passed away around twelve years ago now, and yet every time I make this yummy scrummy potato salad I am reminded of her.

I am reminded of her kindness and of her caring nature. The way she loved her wonderful family with every single little bit of her soul. And the way that she made me feel when I was a little girl – safe, loved, appreciated, special and important. She was a wonderful human being, and I feel so lucky that she was my grandmother.

Now, my grandmother was a natural whiz in the kitchen, and everything (I mean EVERYTHING) that she cooked was always incredible. All of her dishes were carefully and lovingly prepared, and every one of those delicious and beautifully executed meals were created with the knowledge that it was about to make whoever ate it sublimely happy. And it did. Every time.

I love this particular potato salad THAT much, that I still cook it today at just about every chance that I get. I maaayyyyyyyyyy have tweaked this salad just a little over the years to make it even MORE deliciously delicious and as such it is an absolute hit with every single human soul who is lucky enough to taste it.

So here it is. Whip the potatoes out kids, coz you are going to want to make this. Tonight. Trust me.

Grandma Jean’s Delicious Potato Salad

Grandma Jeans Delicious Potato Salad (c) mummalifelovebaby

Serves 6 (as a side)

Ingredients:

8 medium White Potatoes

1 200g tube Sweetened Condensed Milk

2 tsp White Vinegar

1 heaped tsp of English Mustard

150g diced Bacon Pieces

6-8 Spring Onions Diced, ends discarded

1 tbs Olive Oil (or oil of your choice for frying)

Other Stuff You Need:

Chopping Board

Potato Peeler

1 Knife for Dicing

Measuring Spoon – 1 teaspoon

1 large pot for boiling potatoes

1 Colander for draining water from potatoes

1 Medium Fry Pan

1 Spatula

1 large Mixing Bowl

1 small Mixing Bowl

1 Spoon for mixing/serving

Serving Bowl

Your hungry belly

Method:

1. Wash and peel potatoes, and dice into 2cm cubes.

2. Place potatoes into large pot and cover with water.

3. Bring to boil on a high heat on your stove top, and boil the potatoes for around 15 minutes, or until tender.

4. Drain potatoes and then place them into a large mixing bowl and set aside.

5. Heat oil in fry pan, and once hot add bacon pieces and spring onions.

6. Stir frequently until onions are soft and bacon is starting to brown.

7. Remove from heat once cooked to your liking and add to the potatoes in the mixing bowl.

8. Combine the Sweetened Condensed Milk, Mustard and Vinegar in a small mixing bowl and stir until smooth.

9. Add the dressing to the cooked Potato, Bacon and Spring Onion whilst still warm, and stir through until all ingredients are well coated.

10. Serve whilst still warm – its extra delish that way. Or…grab the bowl and a fork, and go and hide in a cupboard to eat it where no-one else can have any. That’s what I would do anyway.

**Just so you know, my husband likes it even more cold the day after it is made. So your mind will be blown no matter when or how you eat it**

So a big THANK YOU to my lovely Grandmother Jean for creating the recipe that somehow morphed into this one. I think of her every time I make it, with a smile on my face, and with love in my heart wishing that somehow she could have been able to taste it at my table with my husband and my baby.

Even so, I know she will be watching over all of us now, purring like a contended cat whilst playing her piano. She will be singing “Tea for Two” or looking for the evening star with her beloved husband, my grandfather, in heaven, and sending us all the love and light she has, from above.
