Feeling like a simple dessert but can’t be bothered whipping up a chocolate mousse or a cake?

Well, that pretty much sums up my entire life.

I am always on the destructive search for something sweet. So much so, that I have had to stop keeping anything naughty in the house at all because otherwise I will scoff the lot on my own before you could even say get your hand off my chocolate bar.

Just last Wednesday, I was twiddling my thumbs thinking about how we had nothing in the pantry for me to gorge myself sick on (which is generally a good and safe thing). Some might even say that I was starting to obsess over it. Some might be completely correct.

I had the words Chocolate Chocolate Chocolate running over in my head on a loop like some crazy Chocolate obsessor.

I stared woefully and blankly into my pantry, until I realised that I actually DID have enough ingredients to whip up something desserty to satisfy my chocolate obsessed mind! And I did what any sane girl would do who has an absurd amount of Chia seeds (bought in bulk from Costco…who the hell needs a pack that big anyway) in the pantry. I decided to make a Chocolate Chia Pudding. Yum Yum. I think.

For years I had been flipping past different recipes of Chia puddings and I had thought each time I saw one that I should get off my behind and actually make one! But I never seemed to get around to it… But on this particular Wednesday, I was reaching my limit of desperation and decided NOT to allow my laziness to get in the way of me and a delicious Chocolatey Chia pudding!

And you know what?! Even with all of my fumbling and all of the Cocoa that I spilled on the floor, it was a success. It turned out to be a super tasty and surprisingly delish dessert! Woo! High five for extra sneaky surprises!

So if you have a bag of Chia seeds just sitting in the cupboard looking unused and seedy like I did, then I would invite you to give this recipe a crack! You will be pleasantly surprised!

It reminds me a little of a Chocolate Yogo that I used to eat when I was little. Puddingy, chocolatey & scrummy sweet. What more does anyone need in a dessert?

But, if you are anything like me, then good luck trying NOT to stick your finger in it every half an hour or so to see if it has set. It probably hasn’t. Just saying….

Simple Chocolate and Blueberry Chia Pudding

Simple Chocolate and Blueberry Chia Pudding (c) mummalifelovebaby

Serves 2

**Note: I originally thought that it served one, but trust me, its enough for two. So, make it for your loved one and share it with them… Just like The Lady and The Tramp…sort of.

Ingredients

1 cup Full Cream Milk

3 tsp Rice Malt Syrup (you could use Honey if you like, though keep in mind that Honey is sweeter than Rice Malt Syrup)

1 tsp Vanilla Extract

1/4 cup Chia Seeds

1 tbsp Cocoa

1 small handful of washed Blueberries to garnish

Stuff You Need

1 Mixing Bowl

1 Whisk

Measuring Cups – 1/4 cup, 1 cup

Measuring Spoon – 1 teaspoon, 1 tablespoon

1 glass (Medium) to share from

Your hungry belly

Method

1. Combine all ingredients, except for the Blueberries into a Mixing Bowl.

2. Whisk until all well combined.

3. Pour combined ingredients into the Serving glass (Note: you could split the mixture in half here and serve in two separate Serving Glasses but where is the slurpy fun in that??).

4. Place dessert into the fridge for an absolute minimum of 4 hours so it properly sets. Letting it set overnight is even better if you can stand having it in your fridge for that long without scoffing it down!

5. Arrange the handful of Blueberries on top once set and dig in!

So there it is! Its easy, its super quick and its tasty and will knock your chocolate cravings out of the park without tasting sickly sweet and painfully sugary.
