Oh. My. God.

Have you (like me) cut up at least a THOUSAND pumpkins over your lifetime and thrown away the pumpkin seeds inside without thinking anything of it?? HAVE YOU??? I know I have.

And since making this recipe I have been slapping my head thinking of all of the wasted delicious pumpkin seeds that never made it into my belly. What a sad fate for me and for all of those super tasty pumpkin seeds.

This discovery came about over the weekend where I was making a pumpkin pie for my family. I was making pumpkin puree from scratch and didn’t want to waste the seeds that I was scooping out of the pumpkin flesh. So I googled pumpkin seed recipes and the recipe below is a tweaked version of what I found!

The end result is a snack sooooooo delicious that they will be eaten in a flash… In fact, you should make double because they are gone almost the second they come out of the oven!

Now keep in mind that the recipe that is shown below was for half a cup of seeds.

Note: The first batch I made before today was from the seeds that came out of a 1.5kg butternut pumpkin. That pumpkin yielded around 50 or so seeds. Not heaps at the end of the day but enough for a tasty scrummy yummy snack! BUT if you don’t have any pumpkin at home you can cheat and buy  packet of Pepita’s from the supermarket. Saves you scooping anything! Great for when we are feeling lazy but peckish!

Hmmm… I had better finish typing up the recipe, so I can go and make some more, coz the more I think about them the more I want them in my face right now… Gimme Gimme Gimme Drool.

Super Tasty Pumpkin Seeds – Spicy and Sweet

Ingredients:

1/2 cup raw Pumpkin Seeds (or you can buy a packet of Pepita’s from the supermarket too!)

1 tbsp Sweet Paprika (regular would be fine too)

1 tbsp Brown Sugar

1-2 tbsp Olive Oil

1 tsp Chilli Powder (or more if you like it EXTRA spicy!)

Salt to taste

Stuff You Need:

Measuring Spoons – 1 tablespoon, 1 teaspoon

Mixing bowl – small

Baking Paper

Spoon for mixing

Baking Tray

Your hungry belly

Method:

1. Preheat your oven to 175 degrees celcius

2. Line a baking tray with baking paper

3. Combine all ingredients listed into a small mixing bowl, and mix until all of the peptita’s are evenly coated.

4. Spread pepita mixture onto the baking paper as evenly as possible

5. Bake for 12 minutes

Enjoy hot out of the oven or cold, as you like!

**Leftover seeds should be stored in an airtight container.
